General principles of preparation:

• All that is needed is high-quality minced meat, ripened eggplant and fresh vegetables.

• Separately, prepare the minced meat, start them with our "eggplant boats" and send them to bake in the oven. We choose other components of the filling to your taste: onions, garlic, herbs, tomatoes, carrots, bell peppers or mushrooms. Tomato sauce will complement the dish (you should pour tomatoes with boiling water or dilute the tomato paste with water, then pour the eggplant in this sauce).

• Baked eggplant in the oven at 200 degrees 30-40 minutes.

• Minced meat can be pork, and beef, and mutton. It is recommended to mix several types of minced meat, for example, assorted pork and beef.

• Spices and herbs: oregano, coriander, paprika, thyme, basil and curry will give a unique "oriental taste" to stuffed eggplants. Choose them according to your taste preferences.

Ingredients:

• Four medium eggplant;

• Two onions;

7. Bring tomato paste with water, stir and put on medium heat. Pour tomato liquid onto a baking sheet with eggplant lying. We put baked in a preheated oven. Cook at a temperature of 180 degrees for half an hour.

Ingredients:

• Three large eggplants;

• 2 tomatoes;

• Three bell peppers;

• Pepper, salt;

• Minced meat (lamb, beef) - 800 g;

• Mint (fresh or dry);

• Garlic;

• Onion;

• A glass of tomato juice;

• Chives.

Cooking method:

1. Cut eggplant in rings of a centimeter in diameter, leave in salted water for 20 minutes to let the juice flow.

2. Cut half the onion as small as possible, send it to the minced meat. Salt, pepper and mix thoroughly.

3. Peel the tomatoes. Cut bell pepper and tomatoes into small cubes. We also cut mint, garlic and parsley very finely.

4. The remaining part of the onion is cut and sent to fry for 2-3 minutes. We also send tomatoes and pepper here. Leave to stew for 5-7 minutes, stirring from time to time. Then fill the vegetables with tomato juice, salt, pepper. Bring to a boil and spread mint, parsley and garlic. Stew the gravy for another three minutes.

5. We compactly interconnect the rings of eggplant and minced meat, forming in a circle a baking dish the so-called “sun”, in the center of which we put yellow pepper. Fill the composition with gravy. We send to bake for 30 minutes.

Turkish eggplant with minced meat and tomatoes

Ingredients:

• Eggplant - 4 pieces;

• Stuffing - 600 g;

• Tomatoes - 3 pieces;

• Bow;

• Bell pepper - 2 pieces;

• Mint;

• Tomato paste;

• Cherry tomatoes - 8 pieces;

• Salt, pepper (to taste).

Cooking method:

1. Cut the stems from the eggplant, clean with strips, cut in half along. Salt water and soak the eggplant in it for 10-15 minutes.

2. The filling is prepared as follows: finely chop the onion and mint, chop the tomatoes on a coarse grater until liquid.

4. In vegetable oil, fry the onions, add 2-3 tablespoons of tomato paste and warm again. Spread the minced meat, mixing well and frying. Add tomatoes, mint and spices to your preference.

5. Part of the flesh from baked eggplant is removed with a spoon, ie make a deepening and set aside in a separate bowl. Fill eggplant with minced meat.

6. Grind the eggplant pulp with a blender until smoothie. With eggplant gruel we close our boats from above. Garnish with cherry tomatoes.

7. In a separate bowl, mix two teaspoons of tomato paste with a glass of hot water. Whisk and salt with a whisk. Pour the prepared eggplants with this sauce.

8. Send to the oven at 200 degrees until the pepper and tomato soften. The dish is ready!

Turkish eggplant with minced cheese

Ingredients:

• Two large eggplant;

• Stuffing - 350 g;

• Onion;

• Tomatoes - 4 pieces;

• Garlic - 2 cloves;

• Greens (bunch);

• Tomato juice - 100 ml;

• Hard cheese - 150 g.

Cooking method:

• Three large eggplants;

• 500 g of minced pork;

• 3 cloves of garlic;

• Ground black pepper, salt;

Cooking method:

1. We combine forcemeat with spices (black pepper, curry) and herbs (parsley, cilantro).
