To cook such a casserole, cottage cheese is not needed, only carrots and semolina. Of the additions you can add raisins and nuts. By the way, nuts create the perfect duet with carrots.

Ingredients:

Carrots - 200 g;

Manka - 100 g;

Sugar - 100 g;

Raisins - 50 g;

Eggs - 2 pcs.

Recipe:

To get started, choose a beautiful and sweet carrot. Well, if carrots are not sweet, then it is better to leave it for cooking main dishes. For this casserole, a children's sweet or maestro is suitable. This variety is easy to find on the market - look for root crops with a blunt tip.

So, peel the carrots and cut into pieces. Fill it with water and set to boil.

At the same time, pour raisins with boiling water and leave it for 15 minutes.

After 10-15 minutes, when the carrots are easily pierced with a fork, drain the water and grind the carrots through a sieve or grind with a submersible blender. The last option will be faster. Add two yolks to the carrot puree.

Add sugar and semolina.

Mix the mass well.

Beat the whites separately in a lush foam with a pinch of salt. Introduce raisins and whipped proteins into carrot puree. Gently mix for the last time.

Lubricate the baking dish with vegetable oil.

We spread the carrot mass into the mold and send it to the oven preheated to 180 degrees. Bake for about 20 minutes.

Serve the cooked carrot casserole hot with an estimated or yogurt. The cooled casserole also has its own special taste and aroma and it seems to us that when it is cold it opens its taste more.
