Tasty and satisfying catfish ear is not only an excellent first course! Such fish soup is even better than raising chicken stock on the feet of a sick person, and the whole point is in the fat content of this type of fish. It is thanks to her that the hot is incredibly rich and very useful.

Catfish is practically the only river fish in the carcass of which there are literally no bones. - For this, many housewives love to cook it. But their erroneous belief is that the head of a catfish is absolutely unfit for food. Believe me, this is not so! If you cook an ear from catfish, using both the head, carcass, and tail, then removing the skeleton from the head, you will find a lot of tasty and juicy meat. Boiled catfish head is a real delicacy for gourmets and those who know a lot about fish dishes!

For 4 servings, you will need:

- som per 1 kg;

- 1 large tomato;

- 1-2 potatoes;

- 1 carrot;

- 1 onion;

- 0.5 tsp. salts;

- 0.5 tsp. granulated sugar;

- 2 l of hot water;

- 0.5 bunch of celery or parsley;

- 2-3 bay leaves.

The only negative of such a fish as catfish is unpleasant mucus on its surface. When purchasing fresh fish, be sure to make sure that the gills of dark pink are closer to the burgundy. If they are gray - refuse to purchase, as this fish is definitely not the first freshness. Also, feel the stomach of the catfish - negligent sellers stick a lot of unnecessary things into the stomach, for example: small fish or wet paper to make the weight of the catfish sold heavier. Be careful - it’s better to pay for tasty meat than for garbage!

As soon as the catfish appears in your kitchen, immediately gut it, making a horizontal cut with a knife from the bottom of its head. There is no need to completely cut the soma belly - the insides are perfectly removed through a small transverse section. Just be careful not to crush the gallbladder!

In a gutted catfish, with a sponge or a hard cloth, thoroughly clean all the mucus from the surface - it can make the ear bitter.

As soon as all procedures for cleaning the fish are finished - cut it into large pieces, separating the head and tail.

Pour in hot water and add salt. Then place the pan on the fire and bring to a boil to remove foam from the surface of the broth. Cook for about 15 minutes.

Peel all the vegetables except the tomatoes, then rinse them in water and cut them into cubes: potatoes are large, and onions and carrots are small. Add to soup and cook for 10 minutes.

Rinse the tomatoes and cut them into large pieces. Together with them, add celery to the ear and chopped greens - without it, the fish soup will not have a pronounced taste! Pour bay leaves and granulated sugar - it neutralizes tomato acid. Cook the ear for another 5-6 minutes and turn off the heat.

To serve, first place the pieces of fish in plates, and then fill them with broth with vegetables. The most respected member of the family will certainly serve a plate with a cat's head. Good appetite!
