Lazy cabbage rolls are a traditional Russian dish. It was prepared in the villages as an everyday or holiday dish.

The main ingredients, as now, were cabbage, rice groats and minced meat. But cabbage rolls can be cooked with other cereals, such as millet, buckwheat or pearl barley. Ideal additional ingredients in this case would be pumpkin, fried vegetables and pickles.

Lazy cabbage rolls in a pan - general cooking principles

Groats for lazy cabbage rolls must first be cleaned, washed and boiled in slightly salt water. Suitable: rice, pearl barley, buckwheat, millet or oat.

Rinse the cabbage and cut into thin strips. If the cabbage is not used for young cabbage, it is better to pour boiling water over it for several minutes, then drain the water. So the bitterness will be removed. If young cabbage is used, then this procedure will be superfluous.

Stuffing for such stuffed cabbage can be used any to your taste. The main thing is that it is fresh and without dimming.

Minced meat should be mixed with all the other ingredients and then cutlets or small balls should be formed. They can be pre-fried in a pan, or immediately put in a pan.

The sauce can be made from mayonnaise, sour cream, tomato paste, cream, ketchup, fresh tomatoes or tomato juice.

It is better to keep the pan half closed during cooking. So the liquid will evaporate gradually, and cabbage rolls have time to prepare.

Lazy cabbage rolls in a pan - a classic recipe

Ingredients:

• 460 g of ground beef;

• 60 g of rice groats;

• 80 g of wheat flour;

• 250 g of fresh white cabbage;

• 2.5 tbsp. l ketchup or tomato paste;

• 210 ml of water;

• salt;

• refined oil.

Cooking method:

1. Sort the rice groats if necessary, rinse and cook. Drain the broth, do not rinse the rice.

2. Wash the cabbage, cut thinly into strips and place in a pan. Pour boiled water over it for a couple of minutes and drain all the water.

3. Stuff the ground beef with boiled rice and cabbage. Season with salt. Form balls or small patties and brew them in sifted flour.

4. Slightly fry the meat balls in a pan until golden brown. Transfer them to the pan.

5. Make a sauce of tomato paste and water. Pour them with lazy cabbage rolls and simmer at moderate heat and an almost closed lid for about an hour.

6. Serve hot, pouring sauce from cabbage rolls.

Lazy cabbage rolls with millet groats in a pan

Ingredients:

• 300 g of pork minced meat;

• 300 g of ground beef;

• 80 g of millet groats;

• 500 g of white cabbage;

• 100 g pumpkin;

• one chicken egg;

• 1 tbsp. l wheat flour;

• 1 tsp seasonings for meat or hops-suneli;

• 150 g sour cream;

• 120 g breadcrumbs;

• 110 g of any ketchup;

• ground black pepper;

• half a glass of water.

Cooking method:

1. Sort millet, rinse, pour in a saucepan with water and cook with a pinch of salt.

2. Thinly cut white cabbage.

3. Grind the pumpkin.

4. Mix pork and ground beef, add boiled groats, cabbage, pumpkin and egg. Add wheat flour, salt, ground pepper and seasoning to the meat there. Stuffing mix well.

5. Hands to form small round cutlets from minced meat and bread them in breadcrumbs.

6. In a saucepan, mix water, ketchup and sour cream, bring to a boil. Add salt if necessary.

7. Dip the meat balls into the boiling sauce one at a time.

8. When all the cabbage rolls are immersed in a saucepan, reduce the heat to small, cover and simmer for about an hour.

9. Serve by pouring sauce from cabbage rolls and garnishing with fresh herbs.

Lazy cabbage rolls with buckwheat and vegetables in a pan

Ingredients:

• 550 g of minced meat;

• one raw chicken egg;

• one carrot;

• one onion;

• 100 g zucchini;

• half a glass of buckwheat;

• vegetable oil;

• 250 g of white cabbage;

• two medium red tomatoes;

• black pepper;

• 120 g of wheat flour.

Cooking method:

1. Sort buckwheat, rinse and add water so that the water covers the groats for 2-3 cm. Put a pinch of salt and cook for about 10 minutes. After that, close the lid with buckwheat and remove the heat. Buckwheat grains swell in boiling water in about half an hour. If you cover the saucepan with a kitchen towel, the swelling process will be faster.

2. Wash all vegetables, dry with paper towels and peel.

3. Grate the carrots.

4. Zucchini chopped into squares.

5. Onion chop into cubes.

6. Chop cabbage.

7. Grind the tomatoes in a blender until a gruel of homogeneous consistency.

8. Minced meat mixed with buckwheat, add onions, a raw egg, a small amount of salt and pepper.

9. Form small cutlets from minced meat and bread them in flour.

10. Move the carrots, cabbage and zucchini into the prepared pan and lightly pass in oil. Pour water so that it covers food by 2-3 cm. Turn on the heating of the stove and bring the vegetables to a boil.

11. Add tomato puree to the pan and mix. If foam appears, remove it.

12. When the base for the stuffed cabbage in the pan boils again, put the minced meat patties there alternately. This must be done carefully.

13. Then cover the pan with a lid and simmer until the meat is fully cooked. If necessary, add salt.

14. Serve in portions. Put the patties first, then top them with a vegetable mixture and pour over the stuffed cabbage sauce.

Lazy cabbage rolls with Beijing cabbage in a pan

Ingredients:

• 450 g of chicken meat;

• 250 g of Beijing cabbage;

• one egg;

• one medium sized onion;

• two cloves of garlic;

• 100 g crackers of wheat bread;

• 70 g of semolina;

• 150-200 ml of water;

• 80 g of tomato paste;

• 150 g of fat cream;

• salt;

• a pinch of pepper.

Cooking method:

1. Peel the onion, wash and chop arbitrarily.

2. Peel and grate the garlic.

3. Wheat crackers mix with cream and leave for a few minutes.

4. Minced chicken mix with chopped vegetables and bread along with cream. Stir in the egg, some salt and pepper.

5. Roll the balls from the stuffing. Banana them in semolina.

6. Wash Beijing cabbage and cut into strips.

7. Add water to the pan. When the contents of the pan are boiling, lower the breaded balls of minced meat one at a time, placing them on the bottom of the pan.

8. Put cabbage on these balls.

9. Tomato paste mixed with water and gently pour into the pan.

10. Bring everything that is in the pan to a boil, remove the foam and simmer until cooked. The lid of the pan should be closed by a third, and the fire is reduced to a small boil.

11. Serve by pouring sauce and sprinkled with fresh herbs.

Lazy cabbage rolls with sauerkraut in a pan

Ingredients:

• 450 g sauerkraut;

• 400 g of minced meat;

• 100 g of rice cereal;

• one large onion;

• 40 g sour cream;

• 420 ml of tomato juice;

• spices to taste;

• vegetable or sunflower oil.

Cooking method:

1. To sort and wash rice. Then boil so that the grains of rice are slightly soft. Drain the broth and cool the rice.

2. Peel, wash and cut the onion into cubes of any shape. After that, fry in vegetable oil.

3. Squeeze the cabbage from the brine, if large pieces of cabbage come across, cut them.

4. For stuffed cabbage, mix minced meat, rice, cabbage, onions. Season with salt and spices. Use your hands to mold small balls.

5. Grease the bottom of a wide pan with butter and put stuffed cabbage.

6. Turn on the heating of the stove so that the cabbage rolls are slightly fried.

7. Tomato juice mixed with sour cream. Pour this mixture into a pan with cabbage rolls.

8. Bring to a boil and then simmer over low heat for 35 minutes.

Lazy cabbage rolls with mushrooms and pearl barley in pan

Ingredients:

• 200 g of champignons;

• 300 g of cabbage;

• one carrot;

• one onion;

• half of sweet pepper;

• 150 g of pearl barley;

• 200 ml of tomato juice;

• 100 ml of water;

• a couple of sprigs of dill and parsley;

• salt;

• vegetable oil or sunflower;

• black pepper (ground).

Cooking method:

1. Sort the barley, rinse with cold water and pour in a bowl. Leave for 5-8 hours to swell (you can overnight). Then rinse the cereal. So the cereal will cook better and faster.

2. Barley put cook in a separate pan. This process will take from 30 minutes to an hour.

3. Peel the mushrooms, wash and cut into thin plates.

4. Wash cabbage, chop.

5. Peel and wash the carrots and onions. Then chop the vegetables finely.

6. Peel sweet peppers from the stalk and seeds. Cut into thin plates.

7. Rinse the greens and chop finely.

8. Fry onions, carrots and peppers in sunflower oil for three minutes. Add mushrooms to the pan and simmer over low heat until the moisture evaporates. Fry a little.

9. Add pearl barley, cabbage, a little hot water, salt and ground pepper to the pan. Simmer for 10-13 minutes before evaporating water.

10. Cool the stew mixture, mold small meatballs and put on the bottom of a wide pan. Pour in tomato juice, sprinkle with chopped herbs.

11. Turn on the heat and simmer the lazy cabbage rolls in the pan until cooked.

12. Serve the dish hot with fresh herbs.

Lazy cabbage rolls in a pan - tricks and tips

  • You can add any greens or vegetables to lazy cabbage rolls to your taste.
  • Minced meat for the dish can be made from different types of meat.
  • To make the cutlets crisp, pre-roll them in flour or breadcrumbs.
  • If desired, you can not form balls from prepared minced meat, but simply extinguish it together with the sauce in a saucepan.
